My kids loooove making breakfast on Mother’s Day and Father’s Day. It doesn’t always turn out perfectly (we’ve had burnt toast a few times!) but the kids like to start planning for it early and write out a menu. This year Kate picked a banana pancake recipe off Allrecipes and we decided to test it out for dinner this week to see if it would make a yummy Father’s Day breakfast.
They were so delicious and we made them huge so the kids called them Man-Cakes, which is perfect for Father’s Day, right? We changed up the recipe a little by adding a touch of cinnamon and vanilla and were so glad we did.
These would be a great addition to your Father’s Day breakfast. What could be better than mancakes for Dad?
Ingredients
1 cup all-purpose flour
1 tablespoon white sugar
2 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon cinnamon
1 egg, beaten
1 cup milk
2 tablespoons vegetable oil
2 ripe bananas, mashed
1/2 teaspoon vanilla
Instructions
Combine flour, white sugar, baking powder, salt and cinnamon. In a separate bowl, mix together egg, milk, vegetable oil, bananas and vanilla.
Stir flour mixture into banana mixture; batter will be slightly lumpy.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until pancakes are golden brown on both sides; serve hot.
Makes about 12 pancakes (4-5 inch diameter). It made about 7 jumbo size cakes.
