These were a great experiment I did late one night. My friend is throwing a surprise “tea party” birthday for her daughter and was looking for fun and easy bite-sized delights. I was thinking about how she could do itty-bitty cinnamon rolls without all the fuss of, you know, making the dough. Taking some help from Pillsbury made these come together in about ten minutes. Easy-peasy.

You can tell from the pics below, I experimented with different fillings — raspberry jam and a hazelnut mocha spread. We loved them both but thought the raspberry was prettier, so I’m posting that version. But know you could sub for whatever you prefer — traditional cinnamon sugar, any flavor of jam etc.

When I make these again (and I will!) I might sprinkle the dough with a little cinnamon sugar first. My kids commented that the dough wasn’t very sweet. It didn’t stop them from eating all of them, but I can see how when you’re expecting that “cinnamon roll” flavor, this might fall short. So think about doing that if you’re looking for a true sweet roll.

These would be great for any breakfast or brunch and are easy enough to pull off on a lazy weekend. We prefer them warm, straight out of the oven!

Ingredients

1 can (8 oz) Pillsbury Crescents Recipe Creations Seamless Dough Sheet

1/4 cup raspberry preserves

1/2 cup confectioners sugar

2 teaspoons milk

Instructions

Unroll dough sheet and use a pizza cutter to divide into 4 sections.

Spread 1 Tablespoon preserves on each rectangle. I got a little creative and did half preserves and half hazelnut mocha spread.

Roll each one up gently and cut into 4 mini rolls. (If rolls are too squishy to cut, stick 'em in the freezer for 10 minutes to firm. Cutting will be easier.)

Place the mini rolls into a greased mini muffin tin cut side down. Bake at 375 degrees for 12 minutes. Cool 2-3 minutes in the pan, then gently remove to a platter to cool.

Stir together the confectioners sugar and milk. Drizzle over the tops of the rolls. Serve warm. Makes 16 mini rolls.
