I found the idea for this recipe in an online message board somewhere and it’s been brewing in my head. The crux of the idea was to use the lime-flavored Wheat Thins in a burger. Sounds totally weird, I know, but I knew immediately it would help hold together a ground turkey or chicken burger AND provide great flavor.
Since we don’t eat much red meat in our house, I’m always trying to find ways to make chicken and turkey burgers taste, well, good — and I have to tell you these were ABSOLUTELY the best chicken burgers we’ve ever had. So good. They were tender and jam-packed with flavor from the salty lime crackers, avocado, cilantro and pepperjack cheese.
And they’re actually pretty darn good for you, too.
These will be a weekly staple in our house this summer. And they keep in the fridge beautifully for leftover lunch the next day!
p.s. If you can’t find the lime wheat thins, you could use lime tortilla chips.
Ingredients
1 pound ground chicken breast
1 ripe avocado, peeled and cut in small chunks
2/3 cup crushed lime flavored Wheat Thins
1/2 cup chopped fresh cilantro
1 chopped garlic clove
Pepperjack cheese slices
Instructions
Preheat grill to medium.
Combine the chopped avocado, crushed wheat thins, cilantro and garlic in a small bowl.
Place the ground chicken in a larger bowl and use your hands to work in avocado mixture. Work in gently, just until combined. Form into 4 to 5 patties.
Place burgers on hot grill. You only need to flip them once. These should cook quickly. Approximately 3 to 4 minutes per side, adding pepperjack cheese during the last two minutes.
Serve immediately.
