The Best Darn Chocolate Chip Muffins Ever

Last week I posted these lemon chia seed muffins . They were soooo good, but for this first batch of “summer vacation” muffins I knew I wanted to go big. Go Bold. Go Chocolate.

Chocolate chip muffins are my absolute favorite, but I rarely make or eat them because they’re so totally like eating dessert for breakfast. There’s nothing wrong with that, in fact on vacation I’ll eat a chocolate chip muffin every single day, but for regular life I try to behave. Sort of. But since school is officially out here and the kids and I are so excited for lazy mornings (have I mentioned we are not a morning family? In fact, we are all pretty nocturnal), that I knew these muffins would be perfect to have for our first 10am wake up call.

Yep, you read that right. We can all sleep til 10am if we really try. It’s awesome.

Anyhoo, these muffins are my favorite homemade version. The secret ingredient is just enough cinnamon to give depth of flavor, but not be too cinnamon-y. Everyone who tasted these couldn’t tell me exactly what was in them but just knew they were reeeeaaallly good.

I found my middle kiddo, Carter, sneaking three of these into a Ziploc bag and making a mad dash for his bedroom.

p.s. Mini chocolate chips are essential. It’s a little chocolate in every bite!

The Best Darn Chocolate Chip Muffins Ever

Ingredients

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 teaspoons baking powder

1/2 teaspoon salt

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

2 eggs

1/2 cup milk

2 cups all-purpose flour, spooned and leveled

1 package(12 ounces) semi-sweet chocolate MINI chips

turbinado or coarse sugar, for topping

Instructions

Preheat oven to 350°F. Line a 12-cup muffin pan with paper liners.

In a large mixing bowl beat the butter, sugar, baking powder, salt, vanilla, and cinnamon until fluffy. Beat in eggs, then stir in the milk. Mix in the flour just until combined, then the chocolate chips

Divide the batter evenly among the muffin cups. Sprinkle with turbinado sugar. Bake the muffins for 20-24 minutes, or set when you jiggle the pan and just golden around the edges.
