S’mores-Stuffed Rice Krispie Treats

It pains me to write this…we are officially in the back-to-school routine. I can’t really tell you where the summer went — I just got all the t-ball games, camps and swimming lessons programmed into my phone — and now they’re over. No more sleeping late, no more swimming after dark. No more staying in our PJs ’til noon, no more long, lazy brunches.

To console ourselves, the kids and I made these gussied-up rice krispie treats. They’re great for lunchboxes…or just gorging on for one last picnic lunch in the backyard.

Also, the baby in my belly really likes them. I mean, really.

S’mores-Stuffed Rice Krispie Treats


3 cups mini-marshmallows

1 1/2 tablespoons butter

2 teaspoons vanilla

3 cups crispy rice cereal

1 cup graham cracker pieces (about 3 full graham crackers broken into small pieces)

1 cup chopped milk chocolate (3 full-size Hershey Bars)


Butter an 8 x 8 inch square pan.

In a large, microwave-safe bowl, place the marshmallows, butter and vanilla in the microwave until the marshmallows begin to soften, about a minute. Mix with a spatula and microwave for another minute until the marshmallows are fully melted. Add the rice krispies until just mixed together. Add the graham cracker chunks and chocolate chips to combine.

Spray your hands with cooking spray and press mixture into the prepared pan. Allow treats to set and DEVOUR!
