This week we were looking for a break from our normal morning smoothies. (That’s actually a nice way of saying my kids are sick of our standard fruit smoothies every single morning.) I’d seen a version of this smoothie on Pinterest, but didn’t like it when I tried it a few weeks ago.
In one of my insomniac-3am-moments-of-clarity, I knew exactly what the smoothies had been missing. The next morning I threw in some maple syrup and the kids inhaled them.
I couldn’t have been happier since these are filled with good stuff — real pumpkin, greek yogurt, banana, almond milk — it almost cancels out the whipped cream I put on top!
Almost.
p.s. Regular milk works fine in these too — just add a pinch of vanilla extract.
Ingredients
1/2 banana
1/3 cup pumpkin puree
1/3 cup plain Greek yogurt
3/4 cup vanilla almond milk (or vanilla soy milk)
1/8 teaspoon pumpkin pie spice
1-2 tablespoons agave syrup or maple syrup
7-8 ice cubes
Instructions
Whipped cream and extra pumpkin pie spice for garnish (optional)
Place all ingredients in a blender and process until ice cubes are crushed.
Makes 1 tall smoothie.
