Are you hosting or going to a barbecue over Memorial Day? I’ve got the perfect dessert…it’s homemade, delicious and couldn’t be easier.

What’s more American than the chocolate chip cookie? Pie! And when married together, this chocolate chip cookie pie couldn’t be more perfect for a Memorial Day, 4th of July or Labor Day holiday. Yay for red, white and blue!

Actually, I just realized there’s no white this dessert.

Awkward.

Anyhoo, this is way easier scooping and rolling the dough into cookies. You just dump all the dough in the pie pan and whoosh — perfection!

I made a double batch of the dough yesterday so I could bake one immediately to photograph, and froze the remaining dough for Memorial Day weekend. On Sunday I’ll pull it out and bake in time to take to our Memorial Day party. Two desserts, one effort…now that’s a patriotic duty I can get behind!

p.s. I was able to find all red and blue M&Ms in the bulk section of my grocery store. If I was smart (which I’m not) I would’ve grabbed white too. If you don’t have bulk M&Ms nearby, buy a few packs from the checkout line and reserve the red and blue ones for the top of the cookie. Use the rest in the batter — you can’t see those anyway!

Ingredients

1/2 cup unsalted butter (1 stick), melted

3/4 cup light brown sugar, packed

1/4 cup granulated sugar

1 tablespoon vanilla extract

1 large egg

1 1/3 cups all-purpose flour

1/2 teaspoon salt

1/8 teaspoon baking soda

3/4 cup semi-sweet chocolate chips

3/4 cup M&Ms, reserve all the red and blue ones to put on the top

Instructions

Preheat oven to 350F. Spray a 9-inch pie with cooking spray; set aside.

Melt butter in microwave. Let cool slightly (so the egg doesn't scramble when you add it). Add the sugars, vanilla and egg; whisk until smooth.

In a separate bowl, combine flour, salt and baking soda. Add to sugar mixture and mix just until combined. Stir in the chocolate chips and M&Ms, reserving red and blue ones.

Place batter in prepared pie dish, smoothing evenly on the bottom and up the sides. Press reserved M&Ms in top of the batter, pushing them down slightly to anchor.

Bake for about 25 minutes, or until golden. Allow pie to cool in dish for at least 30 minutes before slicing and serving.
