Oh My! Oreo Double Stuff Pudding Cookies

We have a regular beach spot we like to visit as often as we can. I’m scared to even tell you about it because I really don’t want you to go there. It’s the biggest, most unspoiled beach I’ve ever seen, in the cutest little town I’ve ever visited. It isn’t crowded, but it isn’t desolate. People ride bikes everywhere and the deer roam freely — often on the beach. There are dolphins a-plenty and the best sunsets you’ve ever seen. Our beach is on Seabrook Island, South Carolina. You may have heard of its sister island, Kiawah, because it’s famous for its golf courses (and beach). But Seabrook is a smaller version and you’re not even allowed on it unless you are renting (or own) a place there. We absolutely love it.

While we were there, I made some of these cookies.

Oreos. Chocolate Chips. Cookies. Good stuff, right?

Chunks of Double Stuff Oreos –because is there really any other kind or Oreo? — take these over the top and the pudding mix keeps them tender on the inside and crunchy on the outside.

I had to throw in some chocolate chips too because, when you’re talking Double Stuff Oreos why not throw in some extra chocolate?

Make these for anyone you want to impress with your baking prowess. They’ll be totally gobsmacked.

Oh My! Oreo Double Stuff Pudding Cookies

Ingredients

1 1/2 sticks (or 3/4 cup) butter

3/4 cup brown sugar

1/4 cup sugar

1 (3.4 oz) package vanilla pudding mix

2 eggs

1 tsp vanilla

1 tsp baking soda

2-1/4 cups flour

14 Oreos, crushed

Instructions

Preheat oven to 350. Combine flour and baking soda and set aside.

In a large bowl, cream butter and sugars together. Add pudding mix and beat until well blended. Add eggs and vanilla.

Add flour mixture slowly until well incorporated. Stir in crushed Oreos. Roll into 1? balls and place on greased baking sheet.

Bake at 350 F for 8-10 minutes or until set in the middle.
