My mom, sisters and I have a thing for Nordie’s tomato soup. It’s what we do when we’re together — shopping, tomato soup and a giant dessert (or three) that we all share.
So I was so tickled to find a copycat version of the famous soup online. I adapted it for the slow cooker, because who has time to sit over a simmering pot for hours, and found it just as delicious. Now if I could just get someone to bring me those yummy parmesan toasts they serve with it! (I always ask for extra toast, don’t you?)
If you don’t have a hand blender (immersion blender) you can throw this in a blender or food processor to puree. Just be careful since it’s hot!
Ingredients
4 large carrots, peeled and diced
1 large onion, sliced
1 tablespoon dried basil
3 (28 ounce) cans whole peeled plum tomatoes (do not drain)
1 quart chicken stock
1 pint half and half, set out at room temp for 30 min.
salt and pepper
Instructions
Place carrots, onion, basil, tomatoes and chicken stock in a slow cooker. Cook on low for 6 hours. Use a hand blender to puree until smooth. Season with salt and pepper to taste. Stir in half and half just before serving (stir this in gradually, so it doesn't curdle). Garnish with parmesan wedges.
