Last summer, I was fortunate enough to judge the Babycenter Summertime Cookoff Contest. I was given strict orders to prepare five finalists’ dishes exactly as written. All five of them were great recipes, my friends. There wasn’t a dud in the bunch and I had a ridiculously hard time choosing a winner. (I threw a “tasting party” with our family and close friends and no one could agree on a favorite, but ALL agreed I had to send out the recipes stat.)
This was one of the surprise hits of the evening. Many of my guests raised an eyebrow when I mentioned that the mango is the star of this guac — but we fought for every last drop of this spicy, sweet and oh-so-smooth guacamole. My advice? Make a double batch…

Ingredients
2 ripe avocados, seeded, peeled, and chopped (about 3 cups)
1/4 teaspoon salt
1 small lime, juiced
1 ripe mango, seeded, chopped (about 1 cup)
1/2 cup white onion, finely chopped
1 jalapeño, seeded, chopped
1/2 cup fresh cilantro, finely chopped
hot sauce to taste
Instructions
1. Lightly (so avocado is still a bit chunky) mash together the avocado, salt, and lime juice in medium bowl.
2. Mix in mango, onion, jalapeño, and cilantro.
3. Refrigerate about an hour before serving.
4. Drizzle with hot sauce to taste. Garnish with additional cilantro and thin slices of lime as desired.
Note: Don’t forget to seed the jalapeño because it is the hottest part of the pepper (unless you like it hotter!)
