We’ve been on a bit of a Mexican kick lately…something about summer says Fresh Mex in our family. (It can’t possibly have anything to do with craving cold Coronas with lime and margaritas on the rocks — when it’s 100 degrees out that’s all I want.) I made these burgers on the fourth of July and really loved how juicy and flavorful they were. I’m not a spicy food kind of gal, but these had just enough kick to make my taste buds dance, but not enough that I had to plunge face-first into a tub of water.
I especially love that you can get the patties all ready ahead of time and just throw them on the grill when you’re ready to eat. Putting the cheese inside the burger makes it even easier when it’s time to grill. Oh, and the toppings really make this burger. Salsa, guacamole and sour cream are delish smothered on top!

Ingredients
1 1/2 pounds ground turkey
1/2 cup finely chopped yellow onion
1/4 cup finely chopped fresh cilantro
2 garlic cloves, finely chopped
2 teaspoons chopped jalapeño
1 teaspoon ground cumin
1 teaspoon paprika
1/3 cup finely shredded cheddar cheese
salt and pepper
Optional Toppings:
guacamole
salsa
sour cream
lettuce
onions
Instructions
Heat grill to medium.
Place ground turkey in a medium bowl. Add onion, cilantro, garlic, jalapeño, cumin, paprika, cheddar cheese, salt and freshly cracked black pepper. Using your hands, mix just until all ingredients are incorporate (then wash those hands!).
Form the mixture into four 1/2"-thick patties. Grill burgers over medium heat until cooked through, 5-7 minutes per side. Serve each patty on a burger bun topped with guacamole and sour cream and salsa if desired.
