We eat a lot of noodle bowls in our house. Lots of different flavor profiles, but the combination of noodles, protein and some type of sauce is usually a surefire hit with my whole family. It’s also a one-bowl meal, especially if you throw some veggies in. This mama really likes that.
This is an oldie but goodie that I make when my pantry and/or fridge is running low. It really doesn’t require much in the way of ingredients, but it has great flavor. It’s a perfect weeknight meal that comes together in minutes and never draws any complaints.
I especially love this for lunch the next day! The garlic and parmesan just get happy together and it’s sooooo good.
p.s. If you use the pre-packaged parmesan from the dairy section, it will be a little clumpy. If you have time to shred your own, the texture is smoother. Either way is fine.
Ingredients
8 ounces spaghetti or linguine
1/4 cup butter
2 tablespoons olive oil
5 cloves garlic, finely minced
1/4 cup grated Parmesan cheese
Salt, to taste
Chopped parsley, for garnishing
2 cups chopped, cooked chicken
Serves 3-4.
Instructions
Method:
Prepare the noodles per the package instructions to al dente. Drain and set aside. Heat up a skillet and add the butter and olive oil. Saute the garlic until slightly brown and aromatic. Toss in the noodles, stir to combine well. Add salt to taste.
Turn off the heat and stir in the chicken and parmesan cheese. Garnish with parsley if desired. Serve immediately.
