Dark Chocolate Merlot Cookies


These cookies, these magnificent cookies, are something different. They’re cookies that will make your friends/enemies/co-workers say, “Wow. That gal can bake!”

These puppies took second place in the Kansas City Star cookie contest last year. They are my go-to cookie when I have red wine left (most people would make a roast or something, but I can find use for anything in a cookie) or need a sophisticated cookie for my swanky friends. (I don’t actually have any swanky friends, but if I did…I would totally serve these.) In any case, the combination of red wine, dark chocolate and dried tart cherries is divine. And these cookies pack a lot of anti-oxidants with all that chocolate and red stuff…so we’ll call them, er… healthy.

Do not overbake these…I noticed they get tough quickly if left too long. And any kind of red wine will do…it doesn’t have to be Merlot. (But it does have to be wine you’d actually drink.) And if you’re in non-alcoholic mood, use a good quality cherry juice.

Dark Chocolate Merlot Cookies

Ingredients

1 1/2 cups all-purpose flour

3/4 cup good quality cocoa powder

1 teaspoon salt

1 teaspoon baking soda

1 stick butter, softened

3/4 cup granulated sugar

3/4 cup packed brown sugar

1 large egg

1 teaspoon vanilla extract

1/2 cup dry red wine, such as Merlot

10 ounces dark chocolate, broken into chunks

1 cup dried tart cherries

Instructions

Preheat oven to 375 degrees F.

Combine flour, cocoa powder, salt and baking soda in a bowl.

In a bowl of an electric mixer, or with a handheld mixer, combine butter and sugars until fluffy. Add egg, vanilla, and wine and combine. Slowly in batches add the flour mixture until just combined. Fold in the chocolate and cherries.

On a nonstick cookie sheet, place a heaping tablespoon of dough for each cookie about 2 inches apart from each other. Bake 8 to 10 minutes, or until tops are still soft looking but edges look firm.
