Welcome back to this edition of Crock Pot Month. Every January I do a month’s worth of Crock Pot recipes because it’s the time of year I crave warm comfort food. And this year I even got a fancy new crock pot to cook in!
I had been using my super awesome 6 qt. crock for years, but lots of times I don’t want to cook that much food. And when you do a recipe meant for a 4 qt. in a 6 qt. it cooks much faster, so the cook time isn’t always accurate. So I shelled out $20 for this newer, smaller version. Yay! (You know you’re a mom when a new crock pot makes you happy!)
Anyway, this first recipe was inspired by, um, mall food. There’s this restaurant in our mall food court called The Great Steak Co. and they make the most amazing chicken Philly sandwich. Our whole family loves them, and I thought they’d be an easy thing to make in the crock pot.
I was right. The crock pot is a perfect place to soften those peppers and onions while cooking the chicken slow and tender. This makes mall food look like…well, mall food.
p.s. If your kids don’t like provolone cheese, top theirs with whatever they want. I have to leave the peppers off for one of my kids and (gulp) top it with American cheese!
Ingredients
2 tablespoons butter
1 large sweet onion, sliced
2 green bell peppers, sliced
1 lb. boneless, skinless chicken breasts
Montreal Steak Seasoning (sold in the spice aisle -- but any steak or chicken seasoning will do)
sliced Provolone cheese
hoagie rolls
Instructions
Spray a 4 quart slow cooker with non-stick cooking spray. Add butter, onions and green peppers. Sprinkle chicken with steak seasoning, then add to slow cooker. Cover and cook for 3-4 hours. Remove chicken and slice thin.
Butter hoagie rolls. Scoop chicken and peppers on one side, then place open-faced on a cookie sheet and broil until bread is toasted and cheese is melted. Enjoy!
