I love a crock pot dish that I can start in the morning and can truly cook ALL DAY. Lots of my favorite slow-cooked meals involve chicken breast, which can only cook for a few hours. This potato dish is one I can start at the crack of dawn and not have to touch until dinner. (These really do take 10-12 hours. If you want them to cook faster, slice the potatoes smaller and turn the heat up to High for the last hour.)
I tried this one early because I thought it’d be great for the Super Bowl. It’s kind of like a bite-sized loaded baked potato — potato kissed with bacon, onion and cheddar and topped with crunchy green onions. You could add a dollop of sour cream to seal the deal and I won’t tell.
Oooey-gooey potato goodness…add these to your slow cooker rotation stat.
Ingredients
1/4 pound bacon, diced
2 medium onions, thinly sliced
2 to 2 1/2 lbs. baby potatoes, quartered
1 cup shredded cheddar jack cheese
salt and pepper
butter
Green Onions (optional)
Instructions
If you want bacon to be crispy, cook it first. (I do this when I'm making this dish for company, but if it's just for my family I don't.) Line a 4 quart crockpot with foil, leaving enough to cover the potatoes while cooking.
Layer half each of the bacon, onions, potatoes and cheese in crockpot. Season to taste and dot with butter. Repeat layers of bacon, onions, potatoes and cheese. Dot with butter. Cover with foil.
Cover and cook on low for 10-12 hours.
Serves 4-6.
