Chocolate Chip Caramel Pretzel Cookies

These are our absolute favorite cookies, and have been for a year or so. These are the cookies I make to bring to someone’s house after they’ve had a baby. These are the cookies I make when our house is on the market and I want prospective buyers to really, really like it. These are the cookies I make when I’ve just had to crappiest day ever and want to faceplant into some chocolate.

Chocolate chips. Caramel bits. Pretzel pieces. These three things together in a cookie are like the trifecta of baked goods. A perfect mix of sweet and salty — I’ve never had anyone NOT ask me for the recipe.

Chocolate Chip Caramel Pretzel Cookies

Chocolate Chip Caramel Pretzel Cookies

Ingredients

1 cup butter, room temperature

3/4 cup sugar

3/4 cup brown sugar

1 teaspoon vanilla

2 eggs

1 teaspoon salt

1 teaspoon baking soda

3 cups flour

1 1/2 cups pretzel pieces

1 cup caramel bits (found in the baking aisle near the chocolate chips)

1 cup semi-sweet chocolate chips

Instructions

In a stand mixer, cream butter with sugars. Add vanilla and egg and mix until combined.

In a separate bowl, combine salt, baking soda and flour. Gradually add to wet mixture. Mix until combined.

Fold in broken pretzels, caramel bits, an chocolate chips. Chill for at least an hour.

Spoon by rounded tablespoonfulls onto a baking sheet with parchment paper. Bake at 350*F for 11-12 minutes.

Makes about 32 cookies.
