Cheater’s Baileys Irish Cream Brownies


What do you do when you need an Irish-themed dessert and you don’t have much time?

You cheat.

You pull out a box of brownie mix and doctor that mother up.

At least, that’s what I did when I needed something St. Paddy’s themed for my Ladies Night Out group. With no flour or cocoa in the house (Sidenote: what kind of food blogger doesn’t have flour in the pantry? One who averages four hours of sleep with a sick todder, that’s who.), I was forced to pull out the mix.

But trust me, none of my girls noticed. The brownie is really just a vehicle for the Bailey’s cheesecake filling in these bars. A layer of creamy liqueur-kissed cheesecake sandwiched in between two layers of chocolate?

Lucky.

I made these in a 9×13, but they might be even better (thicker) in a 9×9 or 11×7. You decide. Either way, you have to chill them before eating. Warm cheesecake just does NOT taste good.

Cheater’s Baileys Irish Cream Brownies

Ingredients

1 box (18.3 ounces) brownie mix

2 (8oz.) pkgs cream cheese, softened to room temperature

1/3 cup sugar

1 tsp pure vanilla extract

1 large egg

1/4 cup Baileys Irish Cream

Preheat oven to 350F and line a 9x13" pan with foil or parchment paper and spray with non-stick spray.

Instructions

Prepare brownie batter according to package instructions.

In a separate bowl, beat remaining ingredients (cream cheese thru Baileys) with an electric mixer until smooth and well blended.

Pour half of brownie batter into pan and spread evenly. Dollop cream cheese mixture on top of brownie batter and gently spread until evenly distributed. Spread remaining brownie batter over the cream cheese mixture.

Bake for 35-40 minutes or until center is set. Cool completely and chill for at least two hours to set cheesecake layer.
