Yesterday I needed a superfast treat for some of Kate’s friends who were coming over after school. I had some Valentine’s M&Ms and thought they’d go perfectly in a bar cookie. (I love a good bar cookie — no scooping and rolling — done in a flash!)
The brown sugar and brown butter in these blondies pack a wallop of extra flavor. They are nice and crunchy on the outside and tender and chocolate-y on the inside.
I had to steal these three bars off someone’s plate to snap a pic — they were gone that fast!
Ingredients
1/3 cup unsalted butter
1 cup all-purpose flour
1/2 teaspoon baking powder
1/8 teaspoon baking soda
1/2 teaspoon salt
1 cup packed brown sugar
1 egg
2 teaspoons vanilla extract
1 cup to 1 1/3 cup M&M's
Instructions
Preheat oven to 350 degrees F (180 degrees C).
Melt butter in a small pan over medium heat. Cook until lightly browned and aromatic, about 3-5 minutes, swirling pan frequently. Set aside to cool.
Mix together flour, baking powder, baking soda, and salt and set aside. In a mixing bowl, combine browned butter and brown sugar. Mix well. Add egg and vanilla. Add flour mixture, a little at a time, mixing well. Mix in 2/3 cup M&M's. Spread in 9 x 9 x 2 inch pan. Sprinkle 1/3 to 2/3 cup M&M's on top. Bake for 20 to 25 minutes. Store in airtight container at room temperature.
