I’m going to throw this out there…these are one of the best cookies I’ve ever made. Really. They’re nice and thick, crunchy on the outside, soft on the inside and the flavor is out of this world.

I’ve made S’mores cookies before, but they’ve always turned out too thin and flat for me. Great flavor but too thin. Adding the pudding mix fixed that (and made the flavor even better). These are thick and sturdy with a perfect buttery texture.

I wouldn’t hesitate to make these for anything — a bake sale, a gift for a friend or even just a pick-me-up for a bad day. There’s nothin’ these S’mores cookies can’t fix!

Ingredients

The key to these is taking the cookies out of the oven 2-3 minutes before they're done and inserting the Hershey piece and marshmallows into the tops, then putting the cookies back in. If you mix the Hershey bars and marshmallows into the batter first, the Hershey bars get lost and the marshmallows get too melted and gooey.

1 1/2 sticks unsalted butter, room temperature

1/2 cup granulated sugar

1/2 cup packed brown sugar

1 package vanilla pudding mix

2 large eggs

1 teaspoon vanilla extract

1/2 teaspoon salt

1 teaspoon baking soda

1 1/4 cups all-purpose flour

1 cup graham cracker crumbs

1 1/2 cups semi-sweet chocolate

1 cup miniature marshmallows

2 Hershey Bars, broken into pieces

Instructions

Preheat oven to 350 degrees. Line 2 cookie sheets with silpat liners or parchment paper.

Cream butter and sugars with an electric mixer; add pudding mix and beat until combined. Beat in eggs and vanilla.

Combine salt, baking soda, flour and graham cracker crumbs in a separate bowl Gradually add to butter mixture. Stir in chocolate chips.

Drop dough by heaping tablespoonfuls onto cookie sheets, spacing about 3 inches apart. Bake for 8-9 minutes. Remove and quickly press marshmallows and chocolate into cookies. Return to oven and cook until done (about 3 more minutes)

Makes about 3 dozen.
