There is nothing I won’t eat if it involves three of my favorite ingredients…graham crackers, chocolate and marshmallows. But put ’em all on a stick and I’m gone. Gone. It’s like a s’mores lollipop, y’all.

These are a perfect little kiddie or adult treat. I brought them to a barbecue and they were gone before the meat was off the grill. So much for dessert, heh? The kids can make these themselves — they may not turn out as pretty, but they love the process. You can make these a couple of hours ahead of time and let them sit at room temp. Don’t refrigerate them; the marshmallows get a funny texture.

1 package graham crackers (about 9 long/large crackers)

lollipop sticks

1 bag large marshmallows

1 package semi-sweet chocolate chips


Place the graham crackers in a strong resealable bag and crush them until they are finely ground. Place crumbs in a small bowl.

Insert lollipop sticks into the middle of the marshmallows.

Melt the chocolate chips on 50% power in the microwave, stirring frequently, until they are melted and somewhat runny. (Hint: if your chocolate seems a little too thick, melt a teaspoon or two of shortening into the chocolate. I know it sounds gross, but it is absolutely the best thinner.)

While holding the stick, carefully dip a marshmallow in the chocolate mixture until completely covered. (You can also just dip them halfway.) Then gently roll the sides and top of the marshmallow in the graham cracker crumbs until they are well-coated. Place on a plate or on wax paper to let cool and dry. Repeat with remaining marshmallows.
