Slow-Cooker Pineapple Chicken Verde (3 ingredients!)

Two things that are awesome about this recipe:

1.) Three ingredients. I mean, who doesn’t love a truly simple recipe.

2.) Slow cooker. A busy mom’s best friend for dinner.

This is so easy it barely even qualifies as a recipe, but it’s too good not to share. Chicken breast gets coated in tangy green chile sauce and sweet crushed pineapple. I tripled the recipe and we had it for dinner over rice with some snow peas and then the next night as tacos. My kids really did like it both ways. The only thing I would change when I make it again is to sprinkle the chicken with salt and pepper first. (Actually, I always have Montreal Steak Seasoning on hand which is an awesome all-purpose blend of salt, garlic salt, pepper and other spices so I would use that.)

Three ingredients. Totally easy. You can’t beat that!

p.s. If you plan to serve this over rice, save all the juices from the crock pot and pour it over the rice to give it flavor. If you’re using for tacos, go ahead and drain it. You can find the verde sauce near the salsa in most grocery stores.

Slow-Cooker Pineapple Chicken Verde (3 ingredients!)

Ingredients

2 large boneless, skinless chicken breasts (about 14 ounces total)

1 cup crushed pineapple, packed in pineapple juice -- do not drain

1/2 cup chili verde sauce (sometimes called salsa verde)

Instructions

Sprinkle the chicken breasts with salt and pepper (or Montreal Steak Seasoning if you have it) and place in the crock pot. Pour pineapple and verde sauce over the top. Cook on low about 4 hours or until chicken shreds easily with a fork. Shred and serve.

Serves 2-3.
