Salted Caramel Bunny Bait

You want to see a real, live miracle?

Here it is:

The mere fact that my kids kept their paws off this stuff for three minutes while I snapped some pics is a complete and utter miracle. I, however, did not fare so well and had to refill the bowl four two times.

This is not bunny bait, people. This is human bait. This is salted caramel crack. I bagged the rest of it to give to our neighbors stat. (These are adorable bagged individually and piled in an easter basket on an unsuspecting neighbors porch!)

If it lasts long enough, the Easter Bunny is sure to stay extra long at your house. If you don’t have popcorn this also works with Rice or Corn Chex. In fact, I think it stays crunchier with the Chex.

Just try and stay away from this stuff…

Ingredients

6 cups plain popped popcorn

2 cups pretzel sticks

1 cup granulated sugar

1/2 teaspoon sea salt, plus more for sprinkling

1/4 cup water

1/3 cup heavy cream

1/2 teaspoon vanilla extract

1 cup mini marshmallows

1 1/2 cups Easter Pretzel M&M's

Instructions

In a large bowl, combine popcorn and pretzels. Set aside.

To make the caramel mixture, bring sugar, 1/2 teaspoon salt, and water to a boil in a medium saucepan over medium high heat. Boil, undisturbed, until mixture is amber in color, for about 8-12 minutes. Remove pan from heat and slowly pour in the heavy cream, stirring constantly with an oven mitted-hand. (Mixture will boil up.) Stir until smooth and add vanilla extract and marshmallows. Stir until marshmallows are melted and mixture is smooth.

Pour caramel mixture over popcorn and pretzels and gently stir with a rubber spatula until popcorn is well coated. Stir in the pretzel M&M's. Transfer mixture to a large baking sheet and sprinkle with sea salt. Let cool completely.

*I used air-popped popcorn which is completely unseasoned, so I was very liberal with the salt. If you use microwave or storebought popcorn, be sure to taste and season carefully.
