Before Easter, I was experimenting with some baked French toast casseroles because I wanted to find the perfect one to share with you.  I looooove a good baked French toast that you can make the night before and just enjoy in the morning.  I’m kind of finicky about my finished product though — it can’t be too soggy, too eggy, too sweet or too thin.  I want something with a little crunch on the outside and smooth on the inside.  I do not want nuts in mine (but you can put them in yours).  And I don’t want a total sugar bomb, but something that’s balanced.

It took a little while, but I found one we love. (And then I forgot to post it.) So here it is, way too late for Easter this year, but perfect for any brunch or weekend morning when you want to just get up and have breakfast almost done.

I think the Granny Smith apples balance the sweetness of this French toast and (later) syrup with a distinct tartness.  The texture was perfect and it was beautiful to look at.  It reheated beautifully, but I have a feeling you won’t need to worry about that!

Ingredients

1 cup brown sugar

1 teaspoon cinnamon

1/4 cup butter, melted

3 apples - peeled, cored and sliced

6 eggs, lightly beaten

1 1/2 cups milk

1 tablespoon vanilla extract

16 ounces Pepperidge Farm Brown Sugar Cinnamon French Toast Bread

Instructions

Grease a 9x13 inch baking dish. In a large bowl, mix together brown sugar and 1 teaspoon cinnamon. Mix in melted butter. Stir in apples until evenly coated. Pour into prepared pan.

In the same bowl, whisk together eggs, milk and vanilla. Working in batches, use a slotted spoon to dip bread cubes in the egg mixture, soaking thoroughly. Place soaked bread over apple mixture. Cover with aluminum foil, and refrigerate overnight. (You can also bake this right away if you want.)

Preheat oven to 375 degrees. Remove dish from refrigerator while the oven is heating. Bake covered for 35 minutes. Remove cover, and bake 10 minutes or until set in the center and bubbly around the outside. Let stand 5 minutes before serving.
