Garlic Chicken Tortellini

I love it when a whole lotta flavor comes from very few ingredients. That’s the case with this super fast meal. It’s all about the garlic, thyme, salt and pepper — and that’s all you need for fast flavor.

All the prep for this is done while the tortellini is cooking, so it comes together really fast. Plus, it contains starch, protein and veggies — so that qualifies as a one-dish meal for me! Perfect for a busy weeknight.

p.s. I always ask my butcher to cut the chicken into bite-sized pieces for me. It saves time and cleaning the cutting board.

Garlic Chicken Tortellini

Ingredients

1 (19 oz) frozen cheese tortellini

1 1/2 cups frozen peas

2 Tbsp olive oil

1 lb boneless, skinless chicken breast, cut into bite-sized pieces

3-4 garlic cloves, minced

1/2 tsp salt

1/2 tsp dried thyme

1/4 tsp pepper

Instructions

Prepare tortellini according to package directions. During the last 5 minutes of cooking add peas. Drain.

While tortellini is cooking heat olive oil over medium heat in a large skillet. Add chicken to skillet and cook for 2 minutes. Add garlic to mixture and cook another 3-5 minutes or until chicken is cooked through.

Add tortellini/peas to skillet and stir in seasonings. Toss to coat.
