Sheesh. What is with all this Mexican food I’ve been posting? You’d think I was pregnant or something.

*crickets chirping*

Just kidding, honey.

This is that salad that I make nearly every week in the summer months. It’s also that salad I bring to a friends house whenever someone says “bring a side dish!” It’s super easy, super yummy and super pretty to look at. How can you say no to that?

Fresh, crisp lettuce topped with grilled corn, black beans, red peppers, and jack cheese? All drizzled with a cool cilantro lime dressing? Now that’s summer perfection.

Pssst…if you want to make this a main dish, throw some grilled chicken or steak in!

Fiesta Summer Salad with Cilantro Lime Dressing

Ingredients

For Salad:

2 heads lettuce, washed and chopped

1 can black beans, rinsed and drained

3 ears corn, grilled

1 large red pepper, chopped

1/2 cup shredded Monterey jack cheese

2 tablespoons chopped cilantro

For Dressing:

1 cup packed cilantro

1/2 cup extra-virgin olive oil

1/4 cup lime juice

1/4 cup orange juice

1/2 teaspoon salt

1/2 teaspoon pepper

Pinch of minced garlic

Instructions

Toss salad ingredients together.

Puree cilantro, olive oil, lime juice, orange juice, salt, pepper and garlic in a blender or food processor until smooth. Drizzle over salad.
