I don’t know about you but I despise side dishes. Not eating them…making them. During the week it’s a struggle for me to get a main dish on the table, so side dishes often fall by the wayside unless they’re in the form of baby carrots, sliced apples or grapes.
But this, this, I can handle. And it’s soooooooooo good.
I know. You see frozen corn in the ingredients list and think how good can it really be? Trust me, the broiler and the olive oil/salt/pepper work magic on this stuff. It’s corn crack, I tell you.
What do you have to lose? A few minutes and a package of frozen corn…that’s it!
Ingredients
1 package frozen corn
2 tablespoons olive oil
salt
pepper
Instructions
Turn broiler on high. Toss corn with olive oil and spread on a cookie sheet. Sprinkle with salt and pepper. Broil about 4 inches from eat until kernels turn golden, about 5-7 minutes. Toss kernels once while broiling. Enjoy immediately.
