Happy New Year! I’m sitting in my kitchen in the wee hours of the morning on our last official day of holiday break. We have spent most of the break staying up late and sleeping in, but for some reason my internal clock blared at 6am this morning as if to say HA HA! FUN’S OVER. GET TO WORK!
I know everyone tries to lighten up a little during this time of year, and this recipe does fit that theme, but honestly it’s just really easy and really good. Tacos are one of the very few meals EVERYONE likes in our house (including the toddler). While I love a good beef taco, sometimes it’s nice to use chicken and throw everything in the crock pot and forget about it. No browning the meat, draining, seasoning etc. during the 6pm witching hour. Instead, throw this in the crock pot during nap time and don’t think about it again until dinner.
Fix it and forget it? Now that’s a meal I can get behind!
Ingredients
1 lb. boneless, skinless chicken breast
Pinch salt
1/4 tsp garlic powder
1/4 tsp oregano
1 1/8 tsp chili powder, divided
3/4 tsp plus 1/8th tsp ground cumin, divided
15 oz can black beans, drained and rinsed
10 oz can tomatoes with mild green chiles (Rotel)
1 medium scallion, diced
1 tbsp chopped cilantro (optional)
Shredded Lettuce
Shredded Cheese
Guac
Salsa
12 crisp corn taco shells
Instructions
Season chicken with pinch of salt, garlic powder, oregano, 1/8 tsp of the chili powder and 1/8th tsp cumin. Add the beans and tomatoes to the crock pot and season with the remaining chili powder and cumin. Place chicken in the crock pot and cover. Cook on HIGH 2-3 hours or LOW 4-5 hours.
