My two older kids come home from school ravenous. They can’t even give me a simple hello until they’ve stuffed their faces for a solid ten minutes. Lately, their snacking has become a mad run to the pantry where they pull out all sorts of packaged crackers and treats. I’m not a stickler for totally healthy snacking, but I do draw the line at four packs of Goldfish and some Oreos. There’s not one ounce of nutrition in any of that.

This week I tried having something yummy waiting for them, so the minute they walked in the door they could pounce. I struggle with getting protein into their snacks because we are such a carb-a-holic family, but this recipe was PERFECT for added protein and just plain being delicious. It’s a simple dip made of peanut butter, greek yogurt and a little honey. I could eat this dip for dessert every single day — it satisfies the sweet, the salty and the crunchy all in one. I threw it out with apples because my kids are suckers for apples and dip, but you could use whatever you want.

My kiddos inhaled this stuff — double-dipping their apples with every bite. I could not have been happier — it beats the heck out of Goldfish and Oreos!

Creamy Peanut Butter Honey Dip

Ingredients

3/4 cup peanut butter

3/4 cup vanilla Greek yogurt

2 tbsp honey or agave, or to taste

Instructions

Mix all ingredients together. Serve with sliced apples. Store in an airtight container in the refrigerator if not eating right away. Makes 1 1/2 cups.
