Chocolate Peanut Butter Pudding Cookies

So today’s recipe was a bit of an accident. I was trying to make a treat to take to a friend who’s very heart-health conscious. I dreamt up these brownies made with avocado and olive oil thinking they’d be the perfect treat without blowing the saturated fat out of the park. I made them.

They were not very good.

They are still sitting in my fridge, begging someone to eat them. I mean, what can you expect of a brownie made with avocado?

Not much.

So I said screw it and looked in my pantry. I’ve been making a lot of pudding cookies lately, but none with chocolate pudding. I had a box, along with some peanut butter chips, so I gave ’em a whirl.

They are so much better than avocado brownies. You should definitely make these. In fact, I don’t even have any left because after we sampled them I stored them in a Ziploc bag, which the dog found 2.5 seconds later and inhaled (the cookies, not the bag).

I wonder if I could interest the dog in some avocado brownies?

Chocolate Peanut Butter Pudding Cookies

Ingredients

2 1/4 cups all-purpose Flour

1 teaspoon baking soda

1/4 teaspoon salt

1 cup butter, softened

3/4 cup packed brown sugar

1/4 cups sugar

1 packages (3.4 Oz. Package) Small Instant Chocolate Pudding Mix

2 whole Eggs

1/2 teaspoon Vanilla

1 1/2 cups peanut butter chips

1 cup chocolate chips

Instructions

Preheat oven to 350 degrees.

In a medium bowl, combine flour, baking soda, and salt. Set aside.

In a large bowl, cream together the butter, brown sugar, and white sugar. Beat in the instant pudding mix until blended. Stir in the eggs and vanilla. Gradually add flour mixture. Finally, stir in chocolate chips. Drop cookies by rounded tablespoonfuls onto ungreased cookie sheets.

Bake for 10-12 minutes. Leave cookies on the cookie sheet for a few minutes, and then transfer to cool on wire racks.

Makes about 3 dozen cookies.
